How do I cook a leg of beef over a spit? All pointers, advise and any other info is appreciated.?

For my daughters graduation my husband intends to slaughter a steer. Have the butcher quarter it. Leave one leg intact to put over a spit. The quarters will be put in a smoker and cooked that way. Seriously need advise on how to cook this thing over a spit. Thanks!!!How do I cook a leg of beef over a spit? All pointers, advise and any other info is appreciated.?
You can buy a rotating spit. I've used them for roasting suckling pigs. The fire has to be somewhat behind the meat. If you roast directly over the fire, the dripping fat will cause the fire to smoke and the meat to burn. Use a spray bottle filled with your favorite marinade. You can spray the meat as it's roasting, rather than basting it with a brush. If your marinade is thick, the spray bottle won't work, however. Finally, since you're cooking beef, you can carve meat from the surface as it's cooking. If you wait for the entire leg to cook, the outer meat will be very well-done. Good luck and congratulations on your daughter's graduation!
